It's easy to prepare if you buy picked beets in a can, then thinly slice (or use a mandolin) red onions. Put sliced red onion and beets, including the juice, into a container (glass or stainless steel is what I use ) and marinate for at least one day, a few more days for extra flavor (note it is good for a long, long time afterwards ). We have a large family so I use 2-3 red onions and a large can of pickled beets (the largest they sell at Smart & Final). Now I'm a busy mom, so I do it the easy way, by buying a can of already pickled beets and adding the red onion (fresh) the way that my mom taught me. However you can make it yourself with fresh beets and red onion, but that way is messy but perhaps healthier if you use fresh beets. My mom made it that way for years but the switched to this recipe. Whichever way you like, but please note the pickled beets in a can worked for me.
Anyways, I ate beets on Thanksgiving, and a few days afterwards I ate the leftovers and all the beets (around four regular helpings I would say). Then after all the beets were gone for some reason I was compelled to drink the beet juice it had been sitting in (which I had never done before).
That weekend my ovary or uterus started throbbing painfully, man that hurt! And then I started bleeding the heaviest I ever had with sorry, TMI, globs coming out as well. Tampon and pad getting soaked and needing to be changed almost hourly. I was worried, as was my husband as we have no insurance. That lasted 3 days and then.....drumroll...I stopped bleeding all together! Total days I bled was 43 days (with maybe a random day or two dry here or there). It's now been almost two weeks with no bleeding.
So researching and reading online somewhere trying to figure out if I had fibroids or cysts, I ran across a recipe for beets and honey drink for fibroid issues. I remembered the beets I ate and the beet juice that I drank and think that is what helped me. So my insides, ovaries or uterus started hurting like before, so I just ate a bunch more of my pickled beets this afternoon, and drank some / a lot of the juice it was sitting in. I'll be making more pickled beets for Christmas (as this is a family favorite). However I will be eating more beets regularly. I will try to remember to post in the future if this helped in the long run.
