What You Need:
- 3 cups boiling water
- 15 ounces Organic Black Soybeans, 1 can, drained, reserve liquid
- 1 Tbsp fresh ginger root, minced
- 1/2 cup carrots, trimmed and sliced into rounds
- 2 tsp Wakame Flakes
- 1 1/2 Tbsp Miso, or to taste
Instructions
Bring water to a boil. Add ginger, and carrot. Bring to a boil, cover, and simmer for 5 minutes. Add the wakame flakes and black beans and cook uncovered at a gentle boil for 1 more minute.
Meanwhile, ladle about 1/8 cup of the hot soup liquid into a cup or bowl and dissolve the miso in it. Just before serving, turn the heat to low, add the miso, stir and simmer, without boiling for 2 to 3 minutes. Dissolve, taste, and add more miso if so desired.
